Bacon & Chocolate "cheat day" cookies

Chocolate chip cookies fresh from the oven.
If you love soft chewy chocolate chip cookies you have to try out this delicious recipe. I have made it in a few of the restaurants and cafes that I have worked in, it is always a crowd favourite. They are called cheat day cookies for obvious reasons but maybe make them smaller and take them to the next dinner party you're invited to and have them with coffee, tea or of course milk.
In one of the many variations I have stuffed them with house made peanut butter (pictured below) for a super decadent cookie, your imagination is your limit, even filled with Nutella they would be amazing, but they can also be enjoyed with a warm glass of milk.
500g Butter
925g Plain Flour
200g Good quality, chocolate chips
150g Streaky Bacon
320g White Sugar
365g Brown Sugar
4 Eggs
2g Sea Salt
5ml Vanilla Essence

Method:

Crispy Bacon Crumb
  1. Lay the thinly sliced bacon on greaseproof paper and put into a preheated oven on 180 for between 12-15 minutes until crispy and the fat has been rendered remove from the fat and leave to cool.
  2. When cool, crush up in a pestle and mortar, or finely chop and keep to the side
  3. Reserve the bacon fat.

Cookie Dough
  1. Get the butter to room temperature, cream together with the 2 sugars, rendered bacon fat and vanilla essence
  2. Mix the eggs in until smooth then mix half the flour and add the rest until almost combined
  3. Add the chocolate chips and bacon, mix until dough is smooth
  4. measure into 1/2 cup balls and put onto a baking tray lined with baking paper.
  5. 160 degree oven for 10 minutes turn the tray then cook for a further 4 minutes until the top of the cookie is just starting to show small cracks
TIPS:
​Use different chocolates or combination of a few
Add different nuts or combination
Add spices in with the flour
Don’t cook too long or no color on top

I gave Jess the recipe so she could make it to camera in a video tutorial and she forgot the eggs apparently they were still a winner, they just called them eggless cookies watch the video here.
